Hot smoked trout fillet
Hot-smoked trout can be characterized by a delicious taste, tempting golden colour and tender and soft consistency. Fully automated smoking ovens and the most modern smoking technology is used to smoke fresh trout in Pähkla – if necessary, the air directed to the oven is moistened or dried through freezing device. Eco-friendly beech splinters are used for smoking and thus the content of benzopyrene is even 5 times lower from EU standards. Dry salting of fish depends on the size of fish and lasts for 10 to 14 hours.
The mellowed products are packaged into vacuum packages to ensure their good conservation and convenient handling. Each week fresh products are delivered to the customers as we deal with each customer's order individually and the product is prepared from the fish caught from the trout farm on the same day.
